When you bake mindfully, you’re doing more than mixing ingredients - you’re practicing patience, cultivating focus, and building resilience. In short, you’re gaining a bit of mastery over both your kitchen and your mind.

Sourdough Tips to Elevate Your Bread and Pizza


If you’re ready to take on sourdough, here are a few pointers to guide you:

  1. For Sourdough Bread:

    • Hydration is Key: A well-hydrated dough leads to that soft, open crumb structure. Aim for around 75-80% hydration (for 500g flour, around 375-400g water). Adjust as needed based on your flour and environment.

    • Patience During Proofing: Allow your dough to rise slowly. Longer proofing (especially in the fridge) helps develop those complex flavors and a beautifully airy texture.

    • Scoring for Success: When it’s time to bake, scoring the top helps control the rise, ensuring a gorgeous crust and crumb.​

  2. For Sourdough Pizza Bases:

    • Stretch, Don’t Roll: After your dough has rested, gently stretch it out rather than rolling it flat. This keeps the air bubbles intact, giving you a light, airy crust.

    • Crank Up the Heat: Sourdough pizza loves high heat, so preheat your oven to the maximum or use a pizza stone if you have one. A quick, hot bake is what gives you that classic crispness on the outside with a soft, chewy interior.​
