Q: What is The Mindful Baker Sourdough Starter Kit?
A: It’s a complete, all-in-one kit with everything you need to bake artisan sourdough at home — from a proofing basket and our unique Leavenator to a professional wooden dough paddle, branded cover, scraper, and a step-by-step guide with access to exclusive video tutorials.

Q: What is the Leavenator and why is it unique?
A: The Leavenator is a custom-designed silicone bowl that helps you prepare the perfect leaven every time. It adapts to your kitchen environment to bring the starter to the right temperature quickly and consistently — meaning stronger fermentation and more reliable bread.

Q: How long does the process take with this recipe?
A: Roughly 2½ days from start to finish:

  • Evening Day 1 — feed your starter.

  • Morning Day 2 — prepare your leaven and mix the dough.

  • Day 2 — stretch, fold, and shape the dough before resting overnight in the fridge.

  • Morning Day 3 — preheat oven, score, bake, rest, and enjoy!

Q: Can beginners really do this?

A: Absolutely. The method is broken into clear steps, with timings to guide you. The videos and FAQ here cover the common challenges so you can bake with confidence.​

🔹 Starter & Leaven​

Q: What’s the difference between a starter and a leaven?
A: The starter is your ongoing culture, fed regularly. The leaven is a fresh offshoot, built from the starter the night before baking, that gives your loaf its rise.

Q: How do I know my starter or leaven is ready?
A: It should rise to the top of its container and look airy and bubbly. If it doubles in size and smells pleasantly yeasty, it’s ready.

​

Q: Does the water need to be filtered?
A: No — but if using tap water, aerate it first to remove chlorine. Simply leave it in an open bottle for 3 hours before use.

🔹 Mixing & Dough Development

Q: Why do we mix flour and water first, then rest before adding salt?
A: This rest (autolyse) allows gluten to begin developing naturally, making the dough stronger and easier to work with.

​

Q: The dough feels sticky — is that normal?
A: Yes! Sourdough is wetter than yeasted doughs. Use a scraper, wet hands, and regular folds to strengthen it over time.

​

Q: How many stretch-and-folds do I need?
A: In this recipe, you do three rounds of folds at 30-minute intervals, followed by a 70-minute rest.

🔹 Shaping & Proofing

Q: Why rest the dough before final shaping?
A: Short rests allow the gluten to relax, making shaping easier and helping the dough hold structure.

​

Q: How do I stop the dough sticking to the proofing basket?
A: Heavily flour the basket before use and ensure your fridge is cold enough so the dough firms up. If it still sticks, gently peel it away before scoring.

​

Q: Can I use different flour in the dough?
A: Yes! As long as it contains gluten. Replace the 500g flour mix in the recipe with whatever blend you’d like, keeping the total weight the same.

🔹 Baking

Q: How hot should the oven be?
A: Turn it to full (around 240°C) and preheat with your pan inside for a full hour.

​

Q: Why do we score the dough?
A: Scoring controls how the loaf expands in the oven, prevents it from bursting unpredictably, and creates a beautiful crust pattern.

​

Q: How long do I bake it?
A: With the lid on for 38 minutes, then remove the lid and bake for a further 5 minutes uncovered.

​

Q: Why rest the bread before slicing?
A: The crumb continues to set as it cools. Wait at least 30 minutes before cutting to avoid a gummy interior.

A: Try reframing the wait as your “mindful pause.” Use the time to check in with your breath or enjoy a quiet moment.

A: Yes — focusing on simple, sensory tasks like mixing, folding, and shaping helps calm the nervous system and ground you in the present.
